Lasagne the lazy way. :)

500gm mince (1 pound of hamburger for the uneducated masses, LOL)
A couple of chopped up garlic cloves - or to taste
A teaspoon or so each (I like more) of basil and oregano
A can of tomatoe puree (425g - have no idea what this translates to - M.C do you have a good conversion site for us please)
2 Tbsp of tomatoe concentrate (I usually forget to buy the stuff and leaving it out doesn't seem to make a great deal of difference)
1 packet of tomatoe soup mix (the dry stuff that you can make dip out of, not the "just add boiling water" type - the simmer type)
2 tsp of beef stock
1 1/2 cups of water.

Mix all the above together - that's your meat sauce.

In a large ovenware dish (I sometimes make it in a deep casserole - Andrew likes it that way but normal lasagne dishes work fine too, watch it doesn't begin to dry out around the edges in flatter dishes) you need to build up layers starting with; a third of the meat sauce - a layer (just an even layer, not too heavy on the pasta or it won't cook properly) of lasagne pasta (the dry stuff - and yes this is uncooked, the juice and liquid in the meat sauce will cook it :) a layer of grated cheese. So it goes; START meat, pasta, cheese, meat, pasta, cheese, meat FINISH.

Then whack it in the microwave (covered) for 30 minutes on high. When it's done spinkle with a little extra grated cheese then mix an egg with 3/4 a cup of milk and 2 tsp of cornflour and pour that over it. Sprinkle with a little paprika if you have some. Stick it back in the microwave for 10 minutes at 50% power, until the topping sets. Leave it to stand for a bit (about 10 minutes but I never can LOL) Serve it with a salad and maybe some fresh bread (not really needed as the pasta is carbs) and I get grumpy if I discover I don't have any olices in the house!!!!

This was the first thing I ever really cooked for myself. I was about 16 at the time and even minced the meat myself as I recall, LOL. I swear that this recipe is a large part of the reason that Andrew married me!!! :) I made it for him you see. :) No one who ever comes for dinner gets away with not having this at least once and many people I know ASK if I'll make it if they're coming over. ;-) Now all my secrets are out!

A couple of hints. If I'm really in a hurry I'll cheat and use Italian seasoned tomatoes and leave out the herbs and garlic (I might add a sprinkle of garlic salt though) and buy pregrated cheese (it is nice to get a little mozerella in there if you can) and just pretty much stand back and fling everything into the dish *grin*. Tomatoe and onion or just plain onion soup mix works Ok too if that's all you have. :) Oh - and it freezes well.
