It sounds like a risotto type dish

Pretty much, but more quick and dirty. You won't need to spoon in the broth. Just add it all at once and boil it down. (Now I'm really giving myself away, but I love risotto. LOL!!!)

What is andouille BTW?

A ham based sausage.

The rice is just a flavoured rice right?

Yup. Here is a description...

Rice a Roni

And I can just here ya'll humming in the background, the San Francisco treat. Forget it, Diane *grinning* a commercial. LOL!!!

I do have saffron in the cupboard

Nope, nope, nope...I can think of much better uses. *grinning* Save it, if it comes in the flavor pack with the rice, cool. But it will probably just get lost overall in this. It gives a rich flavor, but so does the butter in the other seasoning packet. Make sure you put some bay in.

What vegies constitute "gumbo".

Onions, green pepper, tomatoes (taken care of by the V-8), celery, garlic AND okra. No okra...say it isn't so!!! *whimpering*

Is the V8 a vegetable juice?

It sure is. Get the juicer going. But heavy on the tomato.

Let me know how the NZ variety turns out. But again...no okra...*whimper, whimper*
