..(amongst other things) mixed herbs (standard mixture of dried sage, thyme and marjoram here) and crisp fried (and crumpled when cool) bacon in it and a salad dressing (she was very specific about this) that I'm not sure you can get there sorry - Eta potatoe salad dressing. I guess the important thing is that it is a specific salad dressing for potatoe salad rather than mayo in general. BUT, I always felt she was not telling the "all" of this very yummy salad :( but I still try. Opps, forgot - I think the bacon was fried with a dash of worcestireshire sauce as well.

Mine is BORING (I like yours better). First thing is that we are not huge on naming our fruits and vegies here like you guys seem to be - we're coming around to recognising that there are more to potatoes than either old or new, LOL and apples come in varieties too - but it's a loooooong process for us down here. ;) So - take favourite potatoes and peel and slice (actually I prefer to use washed potatoes and leave the skin on where possible now) ...better run and get the book I think, hold on a tick....**Diane running hee, hee** ......Ok, (oh gee - it was right behind me.. I'm a silly woman! *G*). Here ya go..

4 medium potatoes
1/4 cup vinegar
salt & pepper
1 tsp dry mustard
1 tsp worcestishire sauce
1 cup chopped celery
1/4 cup chopped onion
3/4 mayonaise
3 hard boiled eggs
lettuce leaves
1 cup of cooked peas
cucumber slices
2 slices of cooked ham cut into strips
chopped parsley

Combine warm potatoes with vinegar, salt and pepper, mustard, sauce, celery, onions, mayo and chopped eggs.
Mix well and chill until flavours are well blended. Line salad dish with lettuce topped with potaoe salad. Add remaining ingredients as garnishs.

I actually quite like the more German versions which tend towards being more vinegary (and can be eaten warmish if desired) - I'm not a huge fan of mayo and take the liberty of adding garlic salt when I do a (what I call) a German variety. :)
