I don't have a pasta machine, so you have to roll them very thin.
For basic pasta:
5 Eggs
3 tb Olive oil
1 tb Salt
3 c Flour

I also use this one for making pirogi's (Polish stuffed dumplings) and the thick noodles Matt likes in his tuna casserole - both easy if you want the whole recipes:
2 1/2 cups flour
1/2 teaspoon salt
1 egg
2 teaspoons oil
3/4 cup warm water

Flour tortillas -
2 1/2 cups flour
1/2 teaspoon salt
1 egg
2 teaspoons oil
3/4 cup warm water

Add more flour and water as you feel needed, with all these recipes it's kind of touch and go. For the tortillas, roll into small balls (about 12 I think) and flatten with the bottom of a skillet or whatever. Cook them in butter in a non-stick pan. Very easy.
