Subject: Okay, here's mine. Cheaters Gumbo.

1 whole chicken
1 package of Rice-a-Roni Herb and Butter Flavor (there was a saffron based mix that was better, but I don't think they make it anymore)
1 package of gumbo veggies
1 can of spicy V8
coupla dashes of tabasco if you are brave

Cover the chicken and boil until done. Reserve broth for dog. LOL!!! Seriously, if you don't like picking it off the bones and want to make it quicker, use boneless breasts...but it does feed me and the dogs and to me isn't that tough to do bone duty.

If you are brave like me, let the chicken cool and pick the meat off.

Cook the Rice-a-Roni per package instructions replacing the water with chicken broth.

When almost done, add the meat, veggies and about 1/2 cup to a cup (to taste) V-8.

Finish off with the dash of tabasco and stir.

You can also add andouille, shrimp or whatever else you like in your gumbo.

It takes no time at all and I get raves off of this. It amazes me, because I am usually an all day cook *grinning*.

My favorite unexpected company dish. That, a salad and a loaf of french bread (not to mention the ice cream slathered in liquer), usually do the trick.
